I went for the flute myself. I would go for the saxophone but I can't help thinking about Kenny G well I bring it to mind :(

Must be the Sax every time... no other woodwind instrument can touch it for dynamic range... sometimes silky soft & soulful... other times raucous & earsplitting...
Versatile too cos there's 4 types... most of which you'll never hear on dance records... For anyone interested, here's where you can hear breaks by each type...

Soprano - (as murdered by Kenny G) or played properly on "Will You Just Politely Say Goodnight" by Hazel O'Connor

Alto - "Baker Street" by Gerry Rafferty (sax break was played by God... Raphael Ravenscroft)

Tenor - Heard all over the place... uh... "One Step Beyond" by Madness

Baritone - as made famous by Gerry Mulligan (known only to the jazzers I suspect)... uh... the famous farty low note at the end of the muppets theme... that was a bari... :)

The ultimate sax break has gotta be "Hit Me with Your Rhythm Stick" by Ian Dury & The Blockheads... Davey Payne does a solo playing 2 saxes at the same time...
